Garlic and Rosemary Roast Beef

I love this time of year. The beginning of Autumn when the sun is shining but it is cool outside and the leaves are crisp! Sunday’s are always my favourite day anyway, but even more so this time of year. Our Sunday’s tend to be pretty predictable but perfect as far as I am concerned. We never really make plans for them, we prefer to take it easy. We always have some nice breakfast and a chilled morning, which works out best for Joseph as he takes his nap at around 10.30. Once he has woken and had his lunch we usually take him out on his Trike somewhere or to the park and then come home, chill and have some dinner. Today we done exactly that, only we took Joseph out on his new ‘Micro Scooter’ (which he loved) and I then cooked a roast whilst him and the other half watched football ( what a life aye ) Beef is my favourite to cook, so quick and easy and I had to share my little recipe for today! Simple, but amazing.

You will need: Good quality Beef joint – Fresh Rosemary – Garlic – Oil 


Let your beef rest out of the fridge and packet for atleast half an hour before cooking. In the meantime, thinly chop your Rosemary and Garlic. In this instance I used a couple of Garlic cloves and half a bunch of Rosemary due to only using a small joint. Mix both ingredients with a good old lug of oil. Use a brush and coat your beef joint all over with the mixture and then season with some salt and pepper.



Seal each side of your Beef joint in a frying pan and then cook in the oven following your packet instructions.

Example – As there was only us three eating it I only used a small joint which was cooking in the oven for a total of 50minutes. Leave to rest for 10 minutes after.

Serve alongside your favourite roast dinner side dishes, thick gravy and enjoooooy! X
