As previously mentioned, I am always trying to find new and different things to give to Joseph at meal times.
The thing is, like most toddlers and children, Joseph can get bored of things pretty quickly!
He has the usual; Cornflakes, Weetabix, Toast, Omelettes, Scrambled eggs etc but I think he gets as bored eating them as I do giving them to him! Anyway I found this little recipe online and it went down a storm. It is so easy to prepare and make, it really doesn’t take long at all.
However, what a bloody nightmare to add to my mini meltdowns the past couple of days… I prepared them, started cooking the mixture – couldn’t find my bloody spatula could I?! The problem is, sometimes I give Joseph things to play with while I cook and they seem to disappear. So yeah, I was getting in a right flap and stress looking for the spatula.. I ended up burning them all… and then naturally I cried haha. So for that very reason I am unable to provide an after picture. Oops.
All you need is 2 eggs and a banana – simples. Either mash and mix together, however I opted to use my Nutri Bullet to make it smoother.
Melt Coconut Oil/Butter in a frying pan on a medium-high heat and pour the mixture in to make your pancakes. Brown slightly on each side and your good to go. No flour or Milk needed.. just good old eggs and banana.
PS – Still didn’t find my spatula..I forgot and made an omlette later that day and had to use a wooden spoon to flip it. Friends, it is my birthday in 3 days 😉
