Yesterday I got my bake on and made some Flapjacks for the other half and seeing as though we are off on Holiday in just over a month I am trying to be as strict as possible with my eating. My absolute guilty pleasure is Tea and biscuits before bed. I just get such a sweet craving between dinner and bedtime. I even tried having a yogurt after my dinner but that doesn’t seem to work. I think it is more the habit of Tea and biccies before bed. Anyway, I knew that I would give in with the temptation of Flapjacks so wanted to make myself a sweet but healthy alternative.
At the moment I am loving ‘Nakd Bars’. I have started to buy them for my afternoon snack at work and they really hit the spot and stop me going crazy with the work biscuits. A personal favourite is the ‘Cashew Cookie’ bar, so I thought I would try and make my own but in the form of balls instead. Those who are familiar with Nakd bars will be familiar with the consistency and appearance. Agreed they don’t look as appetising as the Flapjacks but I was so impressed with the taste of them that I had to share with you guys. They are super simple to make and sooooooo good. I plan on experimenting with them more next time and maybe adding a bit of Vanilla Essence and coat in Desiccated Coconut.
You will need: A blender. 100g dried dates and 100g cashew nuts. (this will make 6/7 good sized balls)
Blitz the cashew nuts until you have a fine consistency. Add in the dates and give them a whizz together. If the mixture appears quite dry you can add 1 – 2 teaspoons of boiling water. Mould them in to shape, wrap in clingfilm and stick in the fridge to firm up. That really is all there is to it. You are left with 6 fulfilling snacks that are sure to keep your sweet cravings at bay.
