There is nothing more satisfying for me than making food for Joseph, proper home made food.
Ok so it may not always be satisfying when he launches it on the floor and has a face of utter disgust but kids are unpredictable at the best of times aren’t they. For me, I get ultimate satisfaction from seeing Joseph eat and enjoy something that I have made from scratch. I don’t over complicate things when it comes to food for Joseph, and a lot of the time I tend to have the ingredients in my cupboard.
As the chilly weather starts to set in, so does the ‘Winter food’ – you know, the soups, the stews and pure carb overload. This evening I decide to make a simple home made ‘Tomato Soup’ for Joseph. There are many different methods, and I would usually use fresh tomatoes and include Garlic, however for once I didn’t actually have these to hand. Instead I followed the below recipe and he was certainly not disappointed, neither was I 😉 With minimal ingredients and enough left overs to freeze, it was such a hit I had to share.
You will need – 1 tin of chopped tomatoes – 1 onion – Plain Flour – Fresh/Dried Basil – Tomato Puree – Unsalted Butter – Chicken Stock – Salt (optional) – Nutri Bullet/Blender
Method – In a saucepan melt 2 tablespoons of unsalted butter – when melted add in chopped onions and cook until softened – add in a generous tablespoon of flour and mix to create a sand like mixture – slowly add in 600ml of chicken stock whilst whisking – add in your chopped toms and tomato puree – Leave covered on a low heat for half an hour – 1 hour depending on how hungry the little one is. The longer I believe the more flavour – When cooked sprinkle some basil in and give a little stir – pour in to a Blender/Nutri Bullett and that’s all there is too it. You should have plenty left over to chuck in the freezer, as I did!
